ONILDO ROCHA is one of the leading exponents of contemporary Brazilian gastronomy and was a pioneer of signature cuisine from Paraíba, creator of the so-called COZINHA ARMORIAL – an approach that transforms elements of Northeastern popular culture into refined culinary expression. Inspired by Ariano Suassuna's Armorial Movement, the chef proposes a cuisine that unites tradition and erudition, valuing local ingredients, ancestral knowledge , deeply connected to the territory. After a long period conducting signature work at the Notiê restaurant in São Paulo, he is now focused on the recently inaugurated operation in Fernando de Noronha and the reopening of the emblematic Cozinha Roccia in Paraíba.
